The wine that led the crémant revolution: ridiculously good value, made in the same way as Champagne in northern Burgundy—the part of the region closest to Champagne. Dangerously drinkable, but with the yeasty complexity of a bottle-fermented sparkling wine. Four grape varieties (not in percentage order): Chardonnay, Pinot Noir, Gamay and Aligoté.
